TITLE :  Chef De Cuisine


REPORTS TO :  Food & Beverage Director




  • Monitor and maintain food quality. 
  • Monitor and maintain food quality. 
  • Control labor costs of Line Cooks, Prep Cooks and Utility. 
  • Order and inventory food products. 
  • Ensure the safety and cleanliness of the kitchen area. 
  • Schedule Line Cooks, Prep Cooks and Utility. 
  • Supervise Line Cooks, and train staff as needed. 
  • Create dining room specials. 
  • Assist with creation, pricing and presentation of new dining room menus. 
  • Assist with coaching, disciplinary actions and performance reviews. 
  • Hold regular informational meetings with kitchen staff. 
  • Perform other duties and responsibilities as assigned. 

Experience & Qualifications: 

  • Experience working in a large kitchen operation. 
  • Experience as a line cook. 

Skills, Knowledge & Attributes: 

  • Strong culinary knowledge.
  • Strong management skills. 
  • Strong communication and training skills. 
  • Knowledge and utilization of proper sanitation procedures. 
  • Able to analyze food costs and labor reports. 

Universal Requirements: 

  •  Possess a sensitivity to various cultures, including Native American cultures. 
  • Regular attendance and punctuality. 
  • Able and willing to work any changes in scheduled hours as business and staff levels dictate. 
  • Serve as a credit to Jackpot Junction Casino Hotel, and encourage others to do the same.
